Southwest Grilled Salmon with Blueberry Corn Salsa

Ingredients

Southwest Grilled Salmon
  • 2 (6 ounce) salmon fillets, I used Sockeye salmon
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coriander
Blueberry Corn Salsa
  • 2 cups fresh blueberries
  • 1 1/2 cups roasted corn, fresh or frozen and defrosted
  • 1/3 cup red onion, diced
  • 1/3 cup poblano chile pepper, diced
  • 1/4 cup cilantro, chopped
  • Juice of a lime
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon chili powder

Instructions

    1. Preheat grill to medium high heat and oil the grates.
    2. In a small bowl combine the spices for the salmon then rub the mixture all over the fillets.
    3. Grill the salmon for about 4 minutes on each side or until the desired degree of doneness.
    4. Serve immediately with the blueberry corn salsa.
Blueberry Corn Salsa
  1. In a large bowl combine all of the ingredients for the salsa and toss together.
  2. Cover and refrigerate until ready to serve with the salmon.
