Grilled Cod Teriyaki


  • 2 cod fillets (about 2-2,5 cm thick)
  • 1/2 cup water
  • 2 tablespoons dark soy sauce
  • 2 tablespoons dark brown sugar
  • 2 tablespoons mirinu (or pineapple or apple juice)

Teriyaki sauce:

  • 2 tablespoons honey
  • 2 tablespoons dark soy sauce
  • 2 tablespoons mirinu (or pineapple juice or apple)
  • 2 tablespoons sake


  1. Combine the water, soy sauce, brown sugar and mirin best in large bag and add in the fish. Press uot as much air as you can and seal the bag. Put in the fridge for at least an hour.
  2. In the meantime, prepare the teriyaki sauce. In a small saucepan, mix honey, soy sauce, mirin and sake. Boil over medium heat until the sauce thickens. Be careful not to burn it, and remember that it will thicken more as it cools.
  3. Turn the broiler on (maximum temperature) and move the oven rack up to the upper third position.
  4. Put the wire rack on a baking sheet and place the fish pieces skin side down onto the rack, keeping the elevated off the pan.
  5. Grill the 10 minutes (depending on the thickness) basting with the sauce every few minutes. Then flip the fish over and grill the next 10 minutes (depending on thickness) basting with the sauce every few minutes
  6. Remove fish from oven, give the fish one final baste with the teriyaki sauce an rest for few minutes. Then serve.
