Grilled Jerk Shrimp Roll with Tropical Fruit Slaw
Ingredients
  • 1 lb. shrimp, deveined and shells removed
Jerk:
  • 1 tsp. kosher salt
  • ½ tsp. allspice
  • ½ tsp. ancho chili powder
  • ½ tsp. chili powder
  • ¼ tsp. cayenne pepper
  • ½ tsp. dried oregano
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • 1 tbsp. brown sugar
  • ⅛ tsp. fresh grated nutmeg
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground ginger
  • 1 tsp. vegetable oil
  • 2 tsp. fresh lime juice
  • 1 tbsp. low-sodium soy sauce
  • 4 hot dog bun, toasted
  • Tropical Slaw:
  • 3 cups shredded broccoli slaw
  • ⅓ cup julienned mango
  • ⅓-cup julienced pineapple
  • ¼ cup chopped green onion
  • ¼ cup fresh lime juice
  • 2 tbsp. chopped cilantro
  • 1 tbsp. olive oil
  • ½ tsp. kosher salt
Instructions
  1. In a small bowl, mix together salt through ground ginger. Stir in oil and soy sauce.
  2. Place shrimp in a plastic bag and pour in the marinade. Rub all over the shrimp. Refrigerate for 1 hour.
  3. Heat grill to 400°.
  4. Cook shrimp two to three minutes per side. Set aside.
For Slaw:
  1. In a large bowl, gently mix together the ingredients for the slaw. Place in the refrigerator.
  2. Divide the shrimp between hot dog rolls and top with slaw.
